Continuing our recipe pairing series with Chef Christina Machamer, these fluffy, easy, cheesy souffles make a yummy pairing with our Aviatrix Grenache.
Point Reyes Bleu Cheese Souffle
Pair with Aviatrix Grenache
The Aviatrix Grenache is dominated by notes of cranberry, raspberry jam, and other ripe red fruits, balanced by a refreshing acid structure. To highlight these fruit notes without dominating this delicate wine, we are pairing this super simple bleu cheese souffle using local Point Reyes and Fiscalini Cheddar cheeses. The natural salinity of the cheese highlights the ripe jammy notes of the wine, while the acid in the wine mellows out the strength of the cheese. Delicious with Model Bakery Crostini, this dish can be served with any crackers or even green apple slices.
If you are not a fan of bleu cheese, this souffle is easily adapted to use Boursin, Feta, or any other crumbly cheese you desire.
